who we are

Jenny Arrington has always had an eye for design. Part of having an eye is seeing a lot of different places. Growing up as the child of a travel agent and an interior designer, she was fortunate to be able travel to far-off places and experience design in many cultures.

She was hosting elaborate dinner parties complete with themes, table decor, perfect lighting, and soundtracks when she was twenty years old. From there she went on to decorate her boyfriends’ apartments with finds from the Salvation Army to outsized effect.

During her time at the John D. and Catherine T. MacArthur Foundation, she planned events that spanned everything from board meetings to receptions for the President and foreign dignitaries. She co-founded Rebel Human, which, among other things, offered high-touch international retreats for women in the years before covid.

For years, her friends would tell her she should be an interior designer. Now, she's that and more—she’s an ambienteuse.

Joshua M. Gilbert has deep experience in both design and hospitality operations. He is a licensed architect in the state of Illinois and the founder of Temperance Beer Co. As an architect he worked at Gensler, Wood + Zapata, and Morris Architects Planners, and was co-principal at Gilbert Kaeding Architecture + Design.

His hospitality design work includes The Whistler and the Temperance Tap Room, which earned a Design Evanston award Signficant Contribution for Rehab/Renovation. At Temperance he managed all aspects of operations, from production to Tap Room playlists. Other notable hospitality positions include those at Cyrano’s Bistrot & Wine Bar and Levy Restaurants.

When not ambienteuring, he designs (and enjoys) cocktails, makes music with Jenny, and truly savors a late-summer-ripe tomato slice with olive oil and salt.
